Chicory risotto is one of the classic fall and winter dishes, along with pumpkin risotto. There are many varieties of chicory, and depending on the time of year, you can choose the one that you like the most and that your garden has to offer. Growing chicory is not difficult and makes it possible to use the garden even in less favorable periods.
We prepared this chicory and walnut risotto with late chicory, characterized by conical, long, crunchy and sweet leaves. The association with nuts gives the recipe a very nice crunchy note. Finally, a good butter with parmesan and butter will give you a creamy and very tasty risotto!
