Today we present to you a rather special combination for a salad: we are going to combine arugula with fresh fruit, dried fruit and cheese. Although it seems risky, this combination is really tasty, combining the slightly bitter taste of freshly cut arugula from our garden with the sweet note of pears, the salty contrast of grains and the crunch of nuts.
To this is added a seasoning based on extra virgin olive oil, balsamic vinegar and honey, between sweet and sour. The result will be a salad as original as it is light, healthy, seasonal and delicious.
This filling is usually prepared in the fall, since the arugula can be harvested for much of the year and the pears arrive in late summer, while the other ingredients can be stored without difficulty.
