Beet juice, thanks to the presence of nitrates, is often used in sports as a dietary supplement to improve the physical resistance of the subjects to whom it is administered. Clinical studies show that regular consumption of beetroot juice improves circulation and tends to lower blood pressure. Thanks to the presence of multiple vitamins (B2, C, PP, B1) it is also used as a tonic after a prolonged illness. It is also taken as a drink for its well-known antioxidant and purifying qualities and therefore an excellent aid even in the event of weight loss diets or aesthetic treatments. However, as it is obtained from a vegetable with a high sugar content, it is not administered to subjects suffering from diabetes, or kidney stones also due to the massive presence of minerals. Moreover, its ability to stimulate gastric juices makes it unsuitable even for people with stomach problems.

Beetroot recipes are quite simple and tasty, and of course suitable for almost any occasion or variety. To make baked red beets, for example, simply wash and clean six beets (four servings), cut them into wedges, and place them on a parchment-lined baking sheet. Then you have to cook them at 180 degrees for 30 minutes, and check them from time to time to take them out of the oven at the right time (when the vegetables are so tender that putting down the fork offers no resistance). This dish is ideal as a side dish or as a vegetarian main course if you have guests who require this type of cuisine. Another quick and easy dish is beet salad. Just cut off all the leaves and roots and leave only the tuber, which should be boiled in boiling water after being thoroughly washed, until soft. Once cooled, it is cut into pieces and left to marinate for at least an hour in a vinaigrette of oil, vinegar, pepper and salt. The dish can be enriched with salad and orange wedges.

There are so many recipes with beetroot as an ingredient. For a side dish with potatoes and red beets, for example, raw beets are used, and the vegetables are baked and cooked in foil. The ingredients for four people are: 800g new potatoes, rosemary, 100g onion, 200g beetroot, chilli, olive oil and salt. All vegetables must be washed, peeled and cut into cubes: smaller for beets and onions, larger for potatoes. At this point they should be placed on the foil with a pinch of red pepper, salt and a drizzle of oil. Then the sheet can be closed and transferred to the oven at 180 degrees for about an hour. A fun and colorful dish is red gnocchi, which has beets in the batter.
Beetroot: Red beetroot risotto
Beetroot risotto is a dish that takes time to prepare but has a considerable aesthetic impact, suitable for wowing diners at a dinner party where one wants to make a good impression, or for children to eat vegetables in a colorful plate. The ingredients needed for the preparation for four people are: 300g of Arborio rice, 300g of red beets or precooked beets, 1 liter of vegetable broth, 3 tablespoons of extra virgin olive oil, 20g of butter, 20g of Parmigiano Reggiano, 1 shallot. First, the beets should be peeled and boiled to soften them, and they can be stirred for about a few seconds. Then, transfer them to a pan with the oil and the shallot to brown them. Once wilted, mix with a glass of broth and cook for about 5 minutes. At this point, add the rice and let it cook, occasionally adding the broth when it is completely absorbed. To mix the risotto well, add the butter and leave on the heat for another 2 minutes. Once cooked, sprinkle with Parmesan.
